Basically what Dr. Ted explained was that he created a super saturated solution by boiling water with more salt than the water can actually dissolve while the water is at room temperature. He drops a single salt crystal and that is what triggers the reaction. It's purdy cool eh!?
But everyone needs to shut up about how annoying everyone in the video is, that's not the point you fools.

OH. More specifically this is a super saturated solution thing where there is too much sodium acetate in the solution so when just one salt crystal was added the whole thing crystallized and released heat.. Yep, chemistry lesson in AP Bio.
Uh, well all the AP Bio kids were gone because most of them were seniors, leaving the juniors who were left in the class to be doing whatever, but then one of us went to his home country leaving 6 of us, plus one "honorary APBio student" :P
So pretty much this is what happens when there are 7 juniors + Dr. Ted in class near the end of the year when no one is there really.. :D:D

A single seed crystal was added to the saturated sodium Acetate solution while at 30C. Omnidirectional needle-like crystals radiated outward from the seed on contact at the solution's surface. I adjusted the chemistry of the reaction to slow it down and create a long needle like crystallization.

It just takes one small nudge to spark the transformation of a seemingly stable liquid into a solid. The liquid – a supersaturated solution of sodium acetate – consists of water with more dissolved sodium acetate salt than can be stably sustained. When Andy drops in a salt crystal, he provides the kick needed to start the transformation into the more thermodynamically favourable solid state.

At least, that’s what’s meant to happen. Just like science in a lab, science in the Prep Room doesn’t always go to plan first time. It’s a process of trial and error, explaining the unexpected, and exploring the phenomena at work. Curiously, when he goes to start the process, Andy finds that the crystallisation has half-completed – something which should, in theory, be impossible, because once one crystal forms it should kick-start the full process throughout the liquid.

A supersaturated solution is one in which more solute is dissolved than should be able to at the present conditions. These solutions are not stable, and if shaken, or if a seed crystal is added, the solute will precipitate (crystallize) out of solution. In this demonstration, we attempt to build a beautiful French monument by placing seed crystal dust on a dish and adding supersaturated sodium acetate to it drop by drop. Vive la chimie!!!

In this super saturated solution of sodium acetate a solution of extremely high concentration of sodium acetate is precipitated. A super saturated solution works like this: at room temperature only so much sodium acetate will dissolve so a lot of the salt is added to the solution and the temperature of the solution is raised to a point where all of the salt will dissolve. When all of the salt is dissolved the temperature of the solution is slowly brought back down, to avoid the solution precipitating out. This solution is stored in a container that is not directly exposed to the air, because dust can cause the solution to precipitate. Later when the demo is performed a few very small crystals are added to the solution which causes the solution to precipitate.
