In this video I discuss what are nutrients, nutrient density and what are nutrient dense foods, as well as the classifications of the 6 nutrients. I discuss the functions of nutrients in the body, and cover what are nutrients used for. I also briefly cover vitamins, minerals, water, protein, carbohydrates, and fats.
Nutrients are components in food that the body needs to grow and maintain healthy function. Basically the body needs nutrients to survive.
There are 6 classifications of nutrients. Carbohydrates, which are mainly energy for cellular function. Proteins, whose primary function is to grow and maintain tissue and build other important chemicals in the body. Fats, which provide energy and protection.
Vitamins, which contribute to important functions in the body. Minerals, which also contribute to bodily functions. And water, which makes up about 60% of body weight.
It is important to recognize that all 6 nutrients are important for healthy function, with nutrient balance being the key. A great strategy to finding nutrient balance is to eat a wide variety of foods, and avoid eating the same foods every day. Consuming fruits, veggies and other nutrient dense foods can help accomplish this.

In order to maximize the amount of nutrients we take in, we need to eat foods that carry the greatest amount and variety of nutrients.

Potatoes are nutrient-jammed and really one of the world’s most perfect foods.
A single large potato contains lots of Potassium, Magnesium, Iron, Copper and Manganese… with plenty of vitamin C and most of the B vitamins.
They contain a little bit of almost every nutrient we need and there have been accounts of people living on nothing but potatoes for a long time.

Today, Ethan Walter discusses nutrient deficiencies: what they are, how to identify them, and how to treat them.
A nutrient deficiency occurs when a plant is not getting enough of a nutrient for the normal plant functions. Common deficiencies are N, P, K, (three of the macronutrients), and Ca, Mg, and Fe.
In previous videos like this one (https://youtu.be/jaZ_x-sgLO4), you learned that nutrients are measured in water with a number called EC. EC is a very useful number, but it doesn’t tell you what *ratio* of one nutrient to another is. If you have the wrong ratio of one nutrient to another, you could be reading the EC as sufficient, when a certain nutrient is actually too low.
Deficiencies are identified by their symptoms. Some common deficiencies are chlorosis, necrosis, and stunted growth. The pattern that those symptoms occur in are important. Pay attention to where symptoms occur, whether it’s on new or old growth, and what combinations symptoms occur in.
Plant nutrients are categorized as either mobile or immobile in the plant. Mobile nutrient deficiencies occur first in older growth, and immobile nutrients occur in younger growth.

Does Cooking Vegetables Destroy Nutrients? How to Cook Veggies Properly
Vegetables are packed full of health-promoting nutrients, including vitamins, minerals, and phytochemicals.
The nutrient content can vary not only on the kind of vegetable, but also the way in which it was grown and the way that we cook it.
Of these, we have the most control over how we eat it - raw, lightly cooked through a variety of methods, or heavily cooked.
Cooking can alter the chemical composition of foods. This can lead to certain nutrients becoming more bioavailable and others breaking down or leaching from the vegetable into the cooking water.
Certain vitamins are water soluble, so these vitamins can leach from veggies when cooked in water, such as boiling.
On the other hand, some studies have found cooking to increase the antioxidant activity by freeing the antioxidant compounds.
Yet other studies have found a decrease in vitamin C from cooking, which is an antioxidant.
